Pollo entero al horno

Una mesa servida con un ave entera siempre da una buena impresión.    Tanto así que la gente siempre comenta en lo económicamente estable que debe estar la cuenta bancaria para poder comer así.     Pero en realidad un pollo entero es más barato que comprarlo por piezas separdas.    Al separar las piezas hay que pagar por el trabajo de cortarlo y empaquetarlo, mientras que al comprarlo entero no. Otro beneficio de comprarlo entero es que cada quien puede tener la posibilidad de comer la pieza que más le gusta.   Mi esposo y mi hijo prefieren la pechuga mientras que mis hijas y yo preferimos las piernas y alitas.    De igual forma, se le puede sacar provecho a los huesos para sopa y para crear cubitos caseros.     De un solo precio por un pollo entero, puedo sacar dos comidas, eso a mi me suena a ahorro.

A lo largo de los años he tratado de conseguir la receta ideal para un pollo horneado.    Con la piel crujiente, con la carne jugosa y un sabor que enamore.    No ha sido fácil, en muchas ocasiones me quedo la piel crujiente y la carne seca; en otras ocasiones la carne quedo jugosa y la piel también.     En otras oportunidades quise trabajar en el sabor siguiendo recetas que recomendaban dejar el pollo marinandose en vino o en salsa de soya o en aceite con diferentes especies pero al salir del horno no podía apreciar el sabor que estaba buscando.   Así que comencé a simplificar mi forma de prepararlo.

Mis especies base siempre son la sal, el ajo en polvo, el orégano, la cúrcuma y el vinagre de manzana.  Me encanta esa combinación.      Cualquier otro ingrediente varia dependiendo de lo que tenga a la mano.       Lo que transformó por completo el sabor del pollo horneado en mi caso fue el vinagre de manzana.    Desde que lo añado al pollo siempre me queda jugoso con un sabor como si lo hubiese emborrachado en vino y no le he puesto ni una gota de vino.    Primero lo pongo boca abajo y lo dejo que se cocine por una hora y luego lo volteo y lo dejo que se cocine por otra hora más.   Así me queda siempre bien cocido y jugoso por dentro y le da chance a la piel para que quede crujiente.     Si quieres añadirle un toque extra de sabor a la piel, cuando le des vuelta le puedes untar mostaza y ajo en polvo.   Le dará sabor y color, pero aún sin la mostaza el pollo quedará muy rico.
